Carrot Cake

Hi, everyone!

So today i did my carrot cake, which is an amazing dessert for any time of the year. It’s a moist cake with the strong flavour of carrot and the sense of orange. Yes, another twist to the classic! 😉 Besides, it’s quick and easy to make.

And the colour, a dark orange, goes along very well and reminds you of the fall, which is just around the corner, people! Picture it in your head: you, a slice of this amazing soft cake sitting outside watching while the leaves fall in to the ground and the wind starts to blow. Come on, are you going to tell me that doesn’t make you get out of “back to work depression”?

Also, like most of the cakes, it’s a nice dessert to give to your friends and it’s really good for birthday parties, but be careful, that in a smaller group there is a bigger chance that someone might not like carrots, never the less they might enjoyed it in your cake. 🙂

So here is the recipe, hope you enjoy!

Ingredients:

500 gr of carrots

300 gr of sugar

6 eggs (we are going to separate the yolks from the egg whites)

50 gr of plain flour

1 teaspoon of baking powder

the zest of 1 orange

a pinch of salt

Preparation:

1. Peel the carrots and cook them in a saucepan full with water and a pinch of salt.

2. After they are cooked, drain them well and reduce them to a puree ( for those who don’t have a blender, you can use or a kitchen machine, like I did this time or a fork. It’s ok to get larger bits of carrots than a puree, as long as they are smashed.

3. Add the sugar, the egg yolks and the zest of the orange to the puree and beat well.

4. Once that is done, add the flour with the baking powder to the mixture and stir together. Be careful not to beat too much, because it might make the cake hard in the end. So just involve.

5. Whip egg whites until stiff peaks form and then just fold them into the carrot mixture.

6. Pour into a cake pan, previous covered with baking paper

7. Let them bake in the oven for about 40-50 min at 180ºC (remember this cake is moist, so if you want to know if he is ready just take a toothpick and pierce the cake all the way and then take it. If it comes wet, that means that is still not done and you have to leave it for a little longer, but if it comes dry, is ready to be served.)
